Basil chicken fried rice made easy with Jaew Bong seasoning. This dish is packed with fire and savory authentic flavor.
Ingredients

1 - 2 chicken thigh or breast

2 Tbsp Lot’s Jaew Bong Seasoning
-
2 Tbsp vegetable oil

2 cups rice
-
2 eggs
-
2 Tbsp diced yellow onions
-
1 Tbsp green onion stems
-
½ Tbsp chopped garlic
-
Handful Thai basil
-
1 Tbsp coconut aminos
-
1 Tbsp low sodium soy sauce
Directions
In a large bowl, combine the cut chicken and 1 tsp Lot’s Jaew Bong Seasoning. Mix until the chicken is evenly coated. Let the chicken marinate for at least 15 minutes.
In a bowl, beat the eggs, sprinkle 1 tsp of Lot’s Jaew Bong Seasoning evenly across the beat eggs. Whisk the seasoning into the eggs. Set bowl aside.
In small bowl, whisk together coconut aminos and soy sauce, set aside.
Heat 1 Tbsp oil in wok until lightly smoking.
Add eggs to wok and cook to 80% done, remove from wok and set eggs aside.
Add 1 Tbsp oil to same wok, heat until lightly smoking.
Add yellow onions to wok. Stir and sauté until fragrant, about 1 minute.
Add the marinated chicken and cook until browned and cooked through, about 6-8 minutes, stirring occasionally. The internal temperature should reach 165°F (75°C).
Add garlic and green onion stems, stir and toss for 1-2 minutes.
Add the rice. Break the rice if clumpy by pressing down on it with a ladle or spatula. Stir and toss the rice for 1 minute or until ingredients are mixed with the rice.
Add ½ Tbsp Lot’s Jaew Bong Seasoning. Stir and toss for 1-2 minutes.
Tear Thai basil into wok. Stir and toss for 1 minute.
Add remaining Lot’s Jaew Bong Seasoning. Stir and toss.
Add green onion ends. Stir and toss.

Recipe Note
Instead of using Soy Sauce and Coconut Amino. Each sauce could be used entirely by itself and without the other in the recipe.
